This is the meal that keeps on giving. I made each component and then could combine them for lunch and dinner over the week depending on what I was in the mood for: barley, amaranth, quinoa and lentils all cooked together in chicken stock, miso marinated cod, purple cabbage salad with tangy lemon sesame dressing, and an herb salad with sunflower seeds, arugula, basil, parsley, mint, and chives. You could sub in other protein for the fish (chicken or beef, or use mushrooms or tempeh to make it vegan), use other veggies and herbs, different dressings, but the result is a customizable, satisfying and super quick meal that will take you through the week.
