Eggplants stuffed with Lamb (thank you Jerusalem cookbook)

Some dear friends gifted me the “Jerusalem” cookbook for the holidays (by Yotam Ottolenghi and Sami Tamim), and I cannot put it down. I won’t post the recipes here, because you should really go get the cookbook. The pictures alone are worth it. Also, the recipes are all over the internet.
I started the new year off right by making this eggplant stuffed with lamb, sprinkled with mint and pinenuts, with a side of basmati rice full of dried fruits. It made me so happy.
